What Is Real Food? A Back-to-Source Guide to Whole Food

Real food is food you can recognize—grown from the earth, raised on the land, gathered from nature, or made from recognizable ingredients using traditional preparation methods.

To me, it is simple.

Real food includes:

  • Meat and poultry

  • Fish and seafood

  • Eggs

  • Fruits and vegetables

  • Leafy greens

  • Roots and tubers

  • Mushrooms

  • Fresh herbs

  • Spices and aromatics

  • Real salt

  • Honey and other traditional sweeteners

  • Grains and pseudo-grains

  • Legumes and pulses

  • Nuts and seeds

  • Traditional fats

  • Fermented foods

  • And yes, even organ meats

I also advocate for traditional dairy practices and foods such as fresh or raw milk where legally available, whole cream, fresh butter, traditional cheeses, yogurt, kefir and other cultured dairy ingredients.

These foods align with what I call Back to Source Cooking: choosing food in a form that remains as close as reasonably possible to its natural source and original design.

Real food is not another diet.

It is not keto, carnivore, vegan, paleo or any other restrictive label. Different people may choose to eat differently, but real food itself is bigger than any single dietary philosophy.

It is a way of understanding your ingredients.

What Is the Difference Between Whole Food and Real Food?

The terms whole food and real food are often used interchangeably, but within the Back to Source philosophy, they ask slightly different questions.

Whole food asks: What is it?

Real food asks: What is it, where did it come from, and what happened to it before it reached me?

A potato is a whole food. It grew from the earth and remains recognizable as a potato.

But that does not tell us:

  • What kind of seed produced it

  • How the soil was treated

  • Whether synthetic pesticides or herbicides were used

  • How far it traveled

  • How long it was stored

  • Whether anything was applied to it before it reached the store

The potato is still more recognizable than a bag of artificially flavored potato chips. But one potato may be closer to its natural source than another.

This is why Back to Source is not always a rigid yes-or-no classification. It is also a direction.

The goal is to choose food that is as real, whole and close to its source as reasonably possible.

A conventionally grown potato is still a whole food. An organically grown local or homegrown potato may be another step closer to source because its production excludes certain methods and substances.

Under USDA standards, certified organic crops cannot be produced with genetic engineering, and glyphosate is prohibited in organic crop production. Organic does not mean absolutely pesticide-free, but it does meaningfully restrict what can be used and how food is produced. USDA organic production standards

That does not mean you should be afraid to eat a conventional potato.

It means sourcing is part of the story.

Whole Food Does Not Belong With Poison

One of the questions I continually return to is:

Has anything been added to this food that moves it away from its natural design?

Pesticide residue is not an ingredient the body needs. It is not part of the potato, apple or grain. It entered the food’s story somewhere during agricultural production.

Regulators establish legal limits for pesticide residues and maintain that detecting a residue does not automatically mean a food is unsafe. I understand that distinction. But Back to Source asks a different question:

Even when something falls within a legal limit, does it bring the food closer to its original design—or further away?

For me, the direction is clear.

When possible, I prefer food grown without synthetic herbicides, produced from carefully selected seeds, raised in healthier environments and handled with fewer industrial interventions.

That is not always available or affordable. Back to Source is not about condemning someone for buying the food accessible to them.

It is about understanding the difference and moving closer when we can.

Does Real Food Have to Be a Single Ingredient?

A single ingredient is one of the easiest signs that you are looking at a whole food.

What is in a banana?

Literally, just a banana.

But real food does not have to remain a single ingredient.

Mash that banana with an egg and a little cinnamon, cook the mixture in butter or another traditional fat, and you have a simple pancake made from recognizable ingredients.

Three ingredients went into the recipe, but all three are real food.

That distinction matters because some of our most nourishing traditional foods require multiple ingredients and some form of preparation.

Consider:

  • Broth made from bones, water, vegetables, vinegar and herbs

  • Sourdough made from flour, water, salt and a living starter

  • Sauerkraut made from cabbage and salt

  • Cheese made from milk, cultures, enzymes and salt

  • Yogurt made from milk and beneficial cultures

  • Soup made from meat, broth, vegetables, herbs and spices

Combining ingredients does not make food fake.

The better question is:

Can I recognize what this food was made from, and were those ingredients prepared in a way that honors the food?

Processing Is Not Automatically the Problem

We often hear that processed food is bad, but the word processed requires context.

Almost every form of cooking processes food in some way.

When you chop an onion, grind wheat into flour, churn cream into butter, ferment cabbage into sauerkraut or simmer bones into broth, you are processing food.

Humans have processed food for generations by:

  • Cooking

  • Roasting

  • Grinding

  • Soaking

  • Sprouting

  • Fermenting

  • Culturing

  • Pickling

  • Drying

  • Smoking

  • Preserving

These methods can make food more flavorful, usable, digestible or suitable for storage.

The real concern is not processing alone. It is the difference between traditional preparation and industrial ultra-processing.

Traditional Preparation vs. Industrial Ultra-Processing

Processing is not automatically the problem. The meaningful difference is whether recognizable food was carefully prepared—or reconstructed using refined substances and industrial additives.

Traditional Preparation

  • Begins with recognizable food.
  • Uses familiar methods such as cooking, soaking, sprouting, fermenting, culturing, drying and preserving.
  • Preserves, concentrates or develops natural flavor.
  • Uses ingredients you might reasonably keep in a home kitchen.
  • Includes foods such as broth, butter, cheese, yogurt, sourdough and fermented vegetables.
  • Turns whole ingredients into flavorful, nourishing food.

Industrial Ultra-Processing

  • Often begins with refined fractions and industrial ingredients.
  • May rely on processes and equipment that cannot be reproduced in a home kitchen.
  • Frequently engineers flavor, color, texture and shelf stability.
  • Often contains additives and substances rarely used in traditional cooking.
  • Includes many packaged snacks, imitation foods, sweetened drinks and ready-to-eat products.
  • Can make it difficult to recognize the original foods or ingredients.
Ask a better question.

Did the process prepare and preserve recognizable food—or reconstruct it from refined substances, synthetic additives and artificial sensory effects?

How Modern Food Became Disconnected From Its Source

For most of human history, people were closely connected to food production.

They grew food, raised animals, preserved seasonal harvests, bought from nearby producers or knew someone with the skills to turn raw ingredients into meals.

Today, many people encounter food only after it has been:

  • Formulated in an industrial facility

  • Colored or artificially flavored

  • Stabilized with additives

  • Preserved for extended storage

  • Sealed inside branded packaging

  • Transported through a long distribution chain

  • Placed on a convenience-store or supermarket shelf

We see the package, but not the field, animal, farmer, seed, soil, factory or process behind it.

That disconnection makes it harder to know what we are eating.

Back to Source Cooking rebuilds that connection by helping us ask better questions:

  • What is this?

  • Where did it come from?

  • How was it grown or raised?

  • How was it prepared?

  • What was added?

  • What was removed?

  • Could I make a version of this from recognizable ingredients?

  • Is there an option closer to the source?

You do not need a farm, homestead or perfect grocery store to begin asking those questions.

Awareness is the first step.

Are Organic, Non-GMO and Heirloom the Same Thing?

No. These terms describe different parts of a food’s story.

Organic

Certified organic describes a regulated production system. USDA organic standards prohibit genetic engineering and most synthetic substances, including glyphosate, while allowing certain approved substances and farming inputs. USDA organic labeling requirements

Organic is not the same as completely untouched, local or pesticide-free. However, it can be a useful marker for people seeking food produced with fewer synthetic inputs and without genetically engineered seeds.

Non-GMO

GMO commonly refers to an organism whose DNA has been changed using genetic-engineering technology.

This is different from traditional selective breeding. Humans have selected and crossed plants for generations, but genetic engineering uses laboratory techniques to make specific changes to genetic material. FDA explanation of agricultural biotechnology

A non-GMO label addresses genetic engineering. It does not necessarily tell you whether the food was grown organically or treated with synthetic pesticides.

Heirloom

Heirloom generally refers to an older plant variety preserved and passed down through generations of growers.

Heirloom varieties are often valued for flavor, diversity, history and the ability to preserve seed traditions. But heirloom does not automatically mean organic. An heirloom seed can still be grown using conventional agricultural chemicals.

These labels answer different questions:

  • Organic: How was it produced?

  • Non-GMO: Was genetic engineering used?

  • Heirloom: What variety or seed tradition did it come from?

Back to Source considers all three questions, and more without pretending that one label tells the entire story.

Does Grocery-Store Food Count as Real Food?

A grocery-store apple, potato, egg or steak remains a whole food.

But grocery-store food exists on a spectrum of sourcing, production and handling.

A conventional egg and a pasture-raised local egg are both eggs. A conventional steak and a grass-fed steak from a nearby ranch are both recognizable cuts of meat.

Back to Source helps us understand that they may not have identical stories.

One may come from an animal raised outdoors on pasture, happy, in the sun, eating grass and grazing, the way God indended it. Another may come from an industrial operation using different feed, living conditions and production priorities.

One vegetable may be grown in living soil by a farmer you know. Another may be grown for maximum yield, durability and shipping life.

This does not mean that only the ideal option counts.

It means we can recognize the whole food in front of us while continuing to seek options that are closer to source when they become available.

You may begin with:

  • Conventional meat instead of a frozen imitation meal

  • Frozen vegetables instead of no vegetables

  • Regular eggs instead of a packaged breakfast product

  • Store-bought butter instead of margarine

  • Plain yogurt instead of artificially flavored dessert yogurt

  • A grocery-store potato instead of drive-through fries

Then, as access, knowledge and finances allow, you might move toward:

  • Local

  • Seasonal

  • Organic

  • Non-GMO

  • Heirloom

  • Pasture-raised

  • Grass-fed

  • Wild-caught

  • Raw or traditionally cultured

  • Homegrown

  • Homemade

This is a journey toward the source—not a purity contest.

Why Artificial Ingredients Move Food Away From the Source

Artificial dyes, synthetic flavors, industrial seed oils, refined sweeteners, preservatives and other manufactured additives are not part of a food’s original design.

They are often added to:

  • Intensify color

  • Reconstruct flavor

  • Change texture

  • Increase shelf life

  • Reduce production costs

  • Make products more convenient

  • Encourage repeat consumption

These additions can make a product look, taste or behave like food even when little of the original food remains.

A strawberry does not need red dye to convince you it is a strawberry.

Real butter does not require butter flavor.

Homemade broth does not need a packet of artificial flavor enhancers to taste rich.

When food requires an elaborate combination of colors, flavors, gums, emulsifiers, sweeteners and refined oils to become appealing, it is worth asking what remains of the original ingredient.

This does not mean you need to memorize a frightening list of everything to avoid.

Instead, practice looking for what belongs.

How Can You Identify Real Food?

Use these questions when choosing an ingredient or reading a food label.

1. Can I recognize the ingredients?

The fewer mysteries, the better.

2. Could these ingredients reasonably exist in a home kitchen?

Salt, flour, milk, butter, herbs and vinegar are very different from artificial colors, industrial emulsifiers and synthetic flavors.

3. Does the food still resemble its source?

A steak still resembles meat. Applesauce still resembles apples. Butter still comes from cream.

4. Was it prepared with a traditional method?

Cooking, fermenting, culturing, soaking, sprouting, drying and pickling have long histories of use.

5. What was added?

Look for artificial dyes, synthetic flavors, refined sweeteners, preservatives and industrial seed oils.

6. What was removed?

Some products remove natural fat, fiber or other valuable components and replace them with sweeteners, starches, flavors or stabilizers.

7. How was it grown or raised?

When you can, learn about soil practices, pesticide use, animal feed, living conditions and seed selection.

8. Is there a version closer to source?

You do not always need the perfect option. Look for the next reasonable improvement.

Real Food Is About Adding More Life

Real food brings the body materials it recognizes and uses:

  • Protein

  • Amino acids

  • Healthy fats

  • Carbohydrates

  • Fiber

  • Vitamins

  • Minerals

  • Collagen and gelatin

  • Natural pigments

  • Plant compounds

  • Flavor

  • Energy

These foods help provide the building materials and energy involved in maintaining tissues, producing hormones, supporting digestion, fueling the body and carrying out countless everyday functions.

I sometimes describe this through the language of vitality.

Real food is alive with recognizable nourishment. It adds something meaningful to the system.

Ultra-processed food often does the opposite. It may provide abundant calories while also introducing refined substances and additives that displace more nourishing foods and increase the burden placed on the body.

This is not a physics claim or a rigid scoring system. It is a way of understanding whether a food contributes to life and vitality—or moves us further away from them.

Real Food Is Not Another Restrictive Diet

You cannot restrict your way into true nourishment.

The goal is not to eat as little as possible. The goal is to give your body enough of what it needs while maintaining the health and body composition that are right for you.

Real food gives us more:

  • More flavor

  • More variety

  • More minerals

  • More useful nutrients

  • More connection to the seasons

  • More cooking knowledge

  • More confidence

  • More understanding of our bodies

  • More ability to nourish other people

You do not need to identify as keto, paleo, carnivore, vegetarian or anything else to cook with real food.

Begin with the foods you believe are appropriate for your body, then choose versions that are recognizable, thoughtfully sourced and close to their natural form... ya know, closer to source!

How to Start Eating More Real Food

You do not have to replace your entire kitchen today.

Begin with one food you use frequently and move it one step closer to source.

For example:

  • Replace margarine with butter.

  • Replace vegetable oil with tallow, ghee or another traditional cooking fat.

  • Replace artificially flavored oatmeal with oats, fruit, cinnamon and honey.

  • Replace bottled dressing with olive oil, vinegar, herbs and salt.

  • Replace boxed broth with homemade broth when possible.

  • Replace a packaged breakfast bar with eggs and fruit.

  • Replace artificially flavored yogurt with plain yogurt and real berries.

  • Replace drive-through fries with potatoes roasted in a traditional fat.

Then choose another ingredient.

Small decisions, repeated regularly, can completely transform a kitchen.

Do I have to buy everything organic?

No. Organic can move certain foods closer to your sourcing ideals, but eating recognizable whole foods is still a meaningful place to begin. Prioritize changes according to your access, needs and budget.

Is real-food eating a diet?

No. Real food is an ingredient philosophy rather than a prescribed macronutrient ratio or restrictive eating plan. It can support many individual approaches to eating. It's the way humans used to live and nourish until recent history.
