    These soft and delish carrot gnocchi are made with only carrots and flour! They are somewhere between fresh pasta, gnocchi, and a tender little dumpling—and they are almost impossible to get wrong.

    You can roll them into traditional gnocchi, cut them into small pieces, use a tiny pasta shaper, or make them completely by hand like I did. Mine were supposed to look like little button noses, but they basically ended up looking like tiny carrots—which somehow made them even cuter.
